Hey There,
I’M Afaf Kamal-Eldin, Founder of This Page

I am a scientist who found herself there by chance but I did and I am enjoying it. I studied chemistry in the University of Khartoum, Sudan and graduated with master degree in 1990. After that I moved to Sweden and graduated with PhD in Food Chemistry from the Swedish University of Agricultural Scienced in 1993. I worked at the same university and was promoted to professor in 1998 and in year 2000, I moved south again and worked since then at the United Arab Emirates University (UAEU)

I started my research by analyzing and identifying new sesame seed lignans. The discovery that these lignans have a number of bioactive properties opened for me new fields like the study of flaxseed lignans and the establishment of alkylresorcinols as biomarkers of intake of whole grain wheat and rye. I also did a number of studies trying to identify the mechanism of lipid oxidation. In 2015, we reached a convincing understanding of this mechanism within the context of supramolecular chemistry. In UAEU, I changed my research areas to focus on the composition, structure, and properties of foods, specifically camel milk and dates.

This blog will focus on my scientific works and all the nice moments and people associated with that. I hope the blog will be an inspiration  for young minds who can also enjoy research.
